Asparagus Timabale! (aka fancy brunch!)

Asparagus Timbale is that fancy brunch main dish that makes everyone go "Why haven't I had this before?!" Ingredients: 1 tablespoon butter 1 scallion, chopped 1 cup fresh asparagus 1 egg, beaten 2⁄3 cup Swiss cheese, grated (or you can use mozzarella!) 1⁄2 cup milk 1⁄4 teaspoon salt Directions: Cut asparagus into 1 inch pieces! Preheat oven to 350° F In a small frying pan, melt the butter and sauté the scallion and asparagus for a few minutes until both are fairly soft. Place the mixture in the bottom of a well-oiled 1 quart casserole! In a bowl, beat the cheese, milk, salt into the egg.  Pour this mixture over the asparagus mixture in the casserole! Bake in a 350 degree oven for 30 to 40 minutes or until a knife inserted in the center comes out clean. Let cool for 10 minutes, then it's time to enjoy!!

Perfect Puffy Pita

 This bread is perfect for having with some hummus and scrambles eggs in the morning or an awesome sandwich! What is your favourite way to have pita? Ingredients   1 cup water 2 teaspoons active dry yeast 1/2 teaspoon sugar 3 cups all-purpose flour 1 1/2 teaspoons salt  2 tablespoons extra virgin olive oil  Directions Make sponge: In a large mixing bowl add 1 cup lukewarm water and stir in yeast and sugar until dissolved. Add 1/2 cup flour and whisk together. Place the mixing bowl in a warm place (I put in my oven with the oven light on), uncovered for 15minutes to form a loose sponge. Form the pita dough: Now add salt, olive oil and almost all the remaining flour (keep about 1/4 cup of the flour for dusting later). Stir until mixture forms a shaggy mass (at this point, the dough has little to no gluten development and just looks like a sticky mess and you can easily pull bits off). Ahhh man these were so good! I added some queso fresco, cilantro and some pickled onions to these and they were perfect!  Ingredients For the sauce: 3 tablespoons olive oil 3 tablespoons flour  1/2 tablespoon ground chili powder  1 teaspoon ground cumin 1/2 teaspoon garlic powder 1/4 teaspoon salt, to taste Pinch of cinnamon (optional but recommended) 2 tablespoons tomato paste 2 cups vegetable broth 1 teaspoon apple cider vinegar or white vinegar Freshly ground black pepper, to taste  For the flour tortillas: 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking powder 1/3 cup extra virgin olive oil, vegetable oil or other fairly neutral flavoured oil 1 cup warm water For the filling: 1 can black beans 1 can corn 1/2 tsp cumin 1/2 tsp paprika 1/2 tsp salt 1/4 cup enchilada sauce 2  cups shredded cheddar cheese Directions Combine flour, salt and baking powder in the bowl of a stand mixer. Custardy Churro French Toast Stuffed with Nutella!

Tasting this French toast is like stepping into another dimension so feel free to close your eyes and just bliss out...      Ingredients: About 4 slices of bread slices to 1 1/2 inch thick (I used Brioche and it was out of this world!) Nutella for stuffing 3 eggs 2 egg yolks 1 teaspoon ground cinnamon (3g) pinch of  fresh grated nutmeg 1 1/2 tablespoons light brown sugar (23g) 1/2 teaspoon salt (3g) 3/4 cup whole milk (180ml) 1/2 cup heavy cream (120ml) Cinnamon sugar- 3/4 cup granulated sugar (175g) 2 teaspoons cinnamon (6g) Directions: First make a simple cinnamon and sugar by mixing 3/4 cup of sugar and 2 teaspoons of cinnamon! Now it's time to make the custard! In a medium sized bowl add three whole eggs and 2 egg yolks, along with 1 teaspoon of ground cinnamon, 1/2 teaspoon salt, 1 1/2 tablespoons of light brown sugar and a little pinch of freshly grated nutmeg (if you don't have it fresh that's fine!).  Mix all that up until it's thoroughly combined, whisk in 1/2
