crêpes super faciles (super easy crepes)!

Today we're making crepes! Crepes are a staple of France. They can be done so many different ways with so many different batters! You have Crêpes Suzette, whole wheat, berries and cream, ham and cheese and my favorite lemon and sugar. I went on a cruise a couple years ago and there was a crepe station! I went almost every night and befriended the guy who made them. We're still in touch today and he approves of these crepes!
 You will need:
4 eggs
1 1/3 cups milk
2 tablespoons butter, melted, or oil
1 cup all-purpose flour
1/2 teaspoon salt, if desired

1. In medium bowl, beat eggs slightly and add all remaining ingredients; beat until smooth.

2. Heat crepe pan, or 7 or 8-inch skillet over medium-high heat until hot. Grease pan lightly with butter.

3. Pour 1/4 cup batter into hot pan, immediately tilting pan until batter covers bottom. Cook until edges start to dry and center is no longer "runny". Flip and cook other side until light brown. Fill with anything your heart desires...

These are so easy to make and SO yummy. You can make a double recipe and freeze them for later and they cook up great! Just take the crepe put it in the microwave for 10 seconds, heat a pan with some butter and put the crepe in for 2-3 minutes. This is great for a light breakfast or lunch or a fun dessert!
