Almond Butter Banana Bread

 The best banana bread I've made so far and I've made about a dozen! I thought I would miss the chocolate chips and butter, but it is so rich from the almond butter and coconut oil, you don't even miss it! And the cardamom flavor is out of this world paired with the bananas! Ingredients 3 tablespoons plus 1/3 cup almond butter (4.6 oz / 130g) 1 tablespoon plus 2/3 cup sugar (5 oz / 143g) 1 teaspoon plus 1/2 cup virgin coconut oil (4 oz / 115g), gently warmed to liquefy 1 1/3 cups all-purpose flour (6.1 oz / 173g) 1 teaspoon baking powder (0.14 oz / 4g) 1 teaspoon kosher salt (0.11 oz / 3g) 1/2 teaspoon baking soda 1/4 teaspoon ground cardamom- can replace with 1 teaspoon cinnamon 2 large eggs (3.5 oz / 100g), cold from the refrigerator 1 cup mashed banana (8 oz / 227g), from about 3 very ripe large bananas 1/3 cup plain whole milk Greek yogurt (2.8 oz / 80g) 1 teaspoon vanilla extract Directions Preheat your oven to 350 degrees Fahrenheit (175 Celsius) and place a rack in t

Banana Bread Brownies!

 These are the perfect amount of brownie and banana bread! They compliment each other incredibly! Ingredients 3/4 cup salted butter 1 cup granulated sugar 1/2 cup brown sugar 3 large eggs 2 teaspoons vanilla extract 3/4 cup all-purpose flour 1/2 teaspoon salt Banana Bread Batter 1 cup over-ripe mashed bananas (about 2 medium bananas) 1/2 teaspoon baking powder Brownie Batter 1/2 cup unsweetened cocoa powder 1 cup semisweet chocolate chips divided Directions Preheat the oven to 350 degrees F. Line a 9-inch square baking pan with a parchment paper sling. Beat or whisk the butter, granulated sugar, and brown sugar together in a large bowl. Add the eggs and beat again. Stir in flour and salt, just until combined! In a separate medium bowl, mash the bananas and sprinkle the baking powder on top. Stir to combine.  A traditional breakfast from Trinidad and Tobago! This is perfect to warm you up on a cold day or if you are looking for a hearty meal! Ingredients For the bara (flatbread): 2 cups all-purpose flour 1/2 teaspoon salt 1 teaspoon curry powder (ideally Trinidadian) or ground turmeric 1 teaspoon ground cumin 1/2 teaspoon ground black pepper 1 teaspoon yeast 1/3 cup warm water 1/4 teaspoon sugar 1 cup Canola oil (for frying) For the curried chickpea (channa) filling: 1 tablespoon canola oil 3 cloves garlic, minced 1 medium onion, minced 1 tablespoon curry powder mixed with 1/4 cup water 1 14-oz can chickpeas, drained and rinsed with cool water 2 teaspoons ground cumin 2 teaspoons salt 1 teaspoon ground black pepper 1 teaspoon Scotch bonnet or Habanero pepper sauce For the bara (flatbread): In a large bowl, combine the flour, curry powder or turmeric, and cumin. Asparagus Timabale! (aka fancy brunch!)

Asparagus Timbale is that fancy brunch main dish that makes everyone go "Why haven't I had this before?!" Ingredients: 1 tablespoon butter 1 scallion, chopped 1 cup fresh asparagus 1 egg, beaten 2⁄3 cup Swiss cheese, grated (or you can use mozzarella!) 1⁄2 cup milk 1⁄4 teaspoon salt Directions: Cut asparagus into 1 inch pieces! Preheat oven to 350° F In a small frying pan, melt the butter and sauté the scallion and asparagus for a few minutes until both are fairly soft. Place the mixture in the bottom of a well-oiled 1 quart casserole! In a bowl, beat the cheese, milk, salt into the egg.  Pour this mixture over the asparagus mixture in the casserole! Bake in a 350 degree oven for 30 to 40 minutes or until a knife inserted in the center comes out clean. Let cool for 10 minutes, then it's time to enjoy!!

Perfect Puffy Pita

 This bread is perfect for having with some hummus and scrambles eggs in the morning or an awesome sandwich! What is your favourite way to have pita? Ingredients   1 cup water 2 teaspoons active dry yeast 1/2 teaspoon sugar 3 cups all-purpose flour 1 1/2 teaspoons salt  2 tablespoons extra virgin olive oil  Directions Make sponge: In a large mixing bowl add 1 cup lukewarm water and stir in yeast and sugar until dissolved. Add 1/2 cup flour and whisk together. Place the mixing bowl in a warm place (I put in my oven with the oven light on), uncovered for 15minutes to form a loose sponge. Form the pita dough: Now add salt, olive oil and almost all the remaining flour (keep about 1/4 cup of the flour for dusting later). Stir until mixture forms a shaggy mass (at this point, the dough has little to no gluten development and just looks like a sticky mess and you can easily pull bits off). Ahhh man these were so good! I added some queso fresco, cilantro and some pickled onions to these and they were perfect!  Ingredients For the sauce: 3 tablespoons olive oil 3 tablespoons flour  1/2 tablespoon ground chili powder  1 teaspoon ground cumin 1/2 teaspoon garlic powder 1/4 teaspoon salt, to taste Pinch of cinnamon (optional but recommended) 2 tablespoons tomato paste 2 cups vegetable broth 1 teaspoon apple cider vinegar or white vinegar Freshly ground black pepper, to taste  For the flour tortillas: 3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking powder 1/3 cup extra virgin olive oil, vegetable oil or other fairly neutral flavoured oil 1 cup warm water For the filling: 1 can black beans 1 can corn 1/2 tsp cumin 1/2 tsp paprika 1/2 tsp salt 1/4 cup enchilada sauce 2  cups shredded cheddar cheese Directions Combine flour, salt and baking powder in the bowl of a stand mixer. Custardy Churro French Toast Stuffed with Nutella!

Tasting this French toast is like stepping into another dimension so feel free to close your eyes and just bliss out...      Ingredients: About 4 slices of bread slices to 1 1/2 inch thick (I used Brioche and it was out of this world!) Nutella for stuffing 3 eggs 2 egg yolks 1 teaspoon ground cinnamon (3g) pinch of  fresh grated nutmeg 1 1/2 tablespoons light brown sugar (23g) 1/2 teaspoon salt (3g) 3/4 cup whole milk (180ml) 1/2 cup heavy cream (120ml) Cinnamon sugar- 3/4 cup granulated sugar (175g) 2 teaspoons cinnamon (6g) Directions: First make a simple cinnamon and sugar by mixing 3/4 cup of sugar and 2 teaspoons of cinnamon! Now it's time to make the custard! In a medium sized bowl add three whole eggs and 2 egg yolks, along with 1 teaspoon of ground cinnamon, 1/2 teaspoon salt, 1 1/2 tablespoons of light brown sugar and a little pinch of freshly grated nutmeg (if you don't have it fresh that's fine!).  Mix all that up until it's thoroughly combined, whisk in 1/2
